The Smoked Salmon Eggs Benedict
Not your typical eggs benny, as it includes smoked salmon which is a great source of Omega-3. The combination with creamy, ripe avocado is a great juxtaposition to the saltiness of the fish. This is a sure-fire way to start your day and leave you feeling satisfied.

This is a no cleanup wonder dish. Basically preheat your oven, slice your avocado in half, beat an egg and pour into the avocado halves. You can garnish it in a multitude of ways: cheese, cayenne pepper, salt, lemon zest, etc. The possibilities are simply quite endless. Eggocados are easy peasy and done in 20 minutes!
Gwyneth’s Avocado Toast

This is quite possibly the simplest recipe ever and a breakfast I have almost three times a week! Gwyneth Paltrow’s recipe calls for some Vegenaise on toast, few slices of ripe avocado, pinch of salt and pepper, a bit of lemon and chili flakes. I personally just skip the Vegenaise for a lower calorie option and it tastes just as good.

California Avocado Zucchini Muffins
Due to its high fat content, avocado essentially substitutes butter and eggs, which makes this an extremely healthy breakfast option. You can also make a huge batch of it, store in Ziplock bags, refrigerate and take only what you need for that day. Great for packing to work or school!
