Loco for Avocado

Hotly debated by researchers as to whether or not it is in fact the most important meal of the day, breakfast doesn’t seem to go anywhere and is a definite mainstay. This is great news for us at Casual Opulence as we like to start our days with delicious yet nutritious breakfasts. And why not opt to include avocado? It has been dubbed by scientists as the ‘anti-aging superfood’ with an incredible array of benefits that promote healthier cellular environment, increased fat metabolism and antioxidant properties. From an epicurean standpoint, avocado is also one of the most versatile foods as it can be consumed either savory or sweet. We’ve compiled five of our top avocado breakfasts for your tasting pleasure.

The Smoked Salmon Eggs Benedict

by Damned Delicious

Not your typical eggs benny, as it includes smoked salmon which is a great source of Omega-3. The combination with creamy, ripe avocado is a great juxtaposition to the saltiness of the fish. This is a sure-fire way to start your day and leave you feeling satisfied.

The Eggocado

by Tim Ferris

This is a no cleanup wonder dish. Basically preheat your oven, slice your avocado in half, beat an egg and pour into the avocado halves. You can garnish it in a multitude of ways: cheese, cayenne pepper, salt, lemon zest, etc. The possibilities are simply quite endless. Eggocados are easy peasy and done in 20 minutes!

Gwyneth’s Avocado Toast

adopted from the recipe book It’s All Good

by  Thoughts by Natalie

This is quite possibly the simplest recipe ever and a breakfast I have almost three times a week! Gwyneth Paltrow’s recipe calls for some Vegenaise on toast,  few slices of ripe avocado, pinch of salt and pepper, a bit of lemon and chili flakes. I personally just skip the Vegenaise for a lower calorie option and it tastes just as good.

Avocado Breakfast Shake

by Emily Vikre (a.k.a. five and spice)

This breakfast will immediately take you to the tropics and make you dream of sunshine and palm trees. It’s smooth, silky and satisfying. Best of all, you only need five simple ingredients.

California Avocado Zucchini Muffins

by Katie Ferraro

Due to its high fat content, avocado essentially substitutes butter and eggs, which makes this an extremely healthy breakfast option. You can also make a huge batch of it, store in Ziplock bags, refrigerate and take only what you need for that day. Great for packing to work or school!
